Capacidad de innovación en restaurantes: Validación de un instrumento de medición

Resumen

El objetivo del presente artículo fue validar un instrumento que mide la capacidad de innovación en restaurantes, integrado por 27 ítems y aplicado sobre una muestra de 132 establecimientos del destino turístico de Playa del Carmen, en el Caribe Mexicano. Tres factores surgieron del análisis factorial exploratorio:
estructura organizacional, capital humano y redes de colaboración que en conjunto explicaron el 60.66% de la varianza acumulada, además de tener una consistencia interna global (α=.950) e individual satisfactorias de acuerdo con el estadístico alfa de Cronbach. Como resultado, se obtuvo un instrumento fiable y válido, demostrando su eficiencia para medir tres dimensiones de la capacidad de innovación en empresas restauranteras.
